A recent update from Google to the Pixel Watch app now has you re-confirm what account you're using the watch with, and then you'll have to select the watch you're using.
Then, you'll notice a new 'switcher' icon in the top left where you can make that swap between watches.
Methinks that when the new Pixel Watch 2 comes out (Oct 4) someone might want to get both... personally, I'd prefer if they merged the Pixel Watch app with the WearOS app as I do tend to swap back and forth between the TicWatch Pro 3 and the Pixel Watch
