Not that I ever really use the Google Assistant on my watch much but it looks like for any of my older watches (I jostle between using the Pixel Watch and my TicWatch 3) that that option is not going to be there.
Got this notification today
So essentially, if you want to keep the Assistant, upgrade to WearOS 3 (if your watch can) or get a new watch that has it.
